EASY PESTO DRESSING

SERVES 4 | PREPARATION TIME: 5 MINUTES

We like pesto as a dressing on salads as well as with pasta. You can whizz this up in minutes. We make ours dairy-free, but you could add some grated parmesan or pecorino to the ingredients before you blend everything together


INGREDIENTS

Small bunch of basil leaves (about 30g)

15g pine nuts

2 cloves of garlic

1 lemon or lime, juiced

Sea salt and black pepper METHOD Put all the ingredients into a large jug or cup and use a handheld blender to whizz everything together. Season to taste.
