SERVES 4 | PREPARATION TIME: 10 MINUTES | COOKING TIME: 15-20 MINUTES
This easy recipe makes for a quick and delicious evening meal. Combine it with roasted potato wedges or rice and a classic Greek salad for a perfect Grecian delight.
INGREDIENTS
4 cod fillets
1 small green pepper, cut into thin strips
1/2 small red onion, thinly sliced
1/4 cup pitted Greek Kalamata olives, sliced
1 can tomato sauce
1/4 crumbled feta cheese
1 tbsp of OliveOlive Greek Seasoning Blend for Fish
METHOD
Preheat oven to 180C. Place the cod in a greased baking dish. Brush each fillet with a little olive oil and sprinkle with the Greek Seasoning Mix for Fish.
Top each fillet with the green pepper, onion and olives. Finally, pour the tomato sauce over the top and sprinkle with feta cheese.
Bake until fish just begins to flake easily with a fork, 15-20 minutes.
