GREEK STYLE ROASTED POTATOES WITH PARMESAN

A white bowl filled with frshly roasted potato wedges sprinkled with sea salt ans herbs.

SERVES 4 | PREPARATION TIME: 15 MINUTES | COOKING TIME: 55 MINUTES-1 HOUR


This easy recipe makes for a quick and delicious evening meal. Combine it with roasted potato wedges or rice and a Greek salad for a perfect Greek-inspired delight.


INGREDIENTS


7-8 medium Cyprus potatoes, peeled, washed, cut into wedges (if you can't get Cyprus potatoes, desiree is a good substitute)

2 tbsp of OliveOlive Greek Seasoning Blend for Potatoes

8 large garlic cloves, chopped

1 lemon, juice of

250ml cup vegetable broth

50g grated Parmesan cheese

Handful of parsley leaves, roughly chopped


METHOD 


Preheat oven to 200C. Place the potato wedges in a large lightly oiled baking dish and sprinkle with the Greek Seasoning Blend for Potatoes. Toss the potatoes together briefly to evenly distribute spices.


Next, in a bowl mix together the chopped garlic, olive oil, lemon juice and broth. Pour this into the baking dish with potatoes.


Cover the baking dish with foil and place in 200C heated oven for 40 minutes. Remove from oven briefly, uncover and sprinkle Parmesan cheese on the potato wedges.


Return to the oven uncovered to roast for another 10-15 minutes or until potatoes are cooked through and have turned a nice golden brown with a little crust forming. Remove from oven and garnish with fresh parsley before serving.
